Ingredients
1 (4 to 5 lb) whole chicken
1 (12 oz) can of beer, divided
3 Tbs butter, room temperature
1 Tbs honey
1 tsp paprika
1 tsp salt
1/2 tsp dried thyme
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp black pepper
1/4 tsp dried mustard
Directions
  1. Preheat oven to 375 degrees. Place the chicken in a roasting pan. Turn the beer on its side and use a bottle opener to cut a 1-inch hole in the side of the can. Reserve 1/2 cup of beer. Place the can in the cavity of the chicken.
  2. In a bowl, combine the butter, honey and remaining ingredients. Stir together and drizzle in the reserved beer. Pour the mixture over the chicken and rub into the skin.
  3. Place in the oven and cook for 1 1/2 to 2 hours or until the chicken reaches an internal temperature of 165 degrees when an instant read thermometer is inserted into the thickest part of the thigh.
  4. When ready, use tongs to carefully remove and discard the can.
